Edamame Guacamole


Edamame Guacamole

1-12 oz bag frozen Edamame, shelled and thawed
1 medium avocado
1 tablespoon fresh lemon juice
1/8 cup cilantro pesto
Red pepper flakes to taste

In a medium size bowl, mash edamame until slightly chunky. Add remaining ingredients and continue to mash until mixed thoroughly. Serve as as a dip or condiment.
